Easy Children's Mousse

Ingredients

  • 125g dark chocolate (I chose 85%)
  • 3 eggs
  • 2 tsp vanilla essence
  • ½ – 1 tbsp maple syrup (sweetness dependent on what your little ones like)
  • 1 orange, zested

Method

  1. Melt your dark chocolate on a low heat and set aside to cool.
  2. Separate your egg whites and egg yolks.
  3. Zest 1 orange and add to your melted dark chocolate.
  4. Add the vanilla essence to the egg yolks and whisk until stiff peaks form.
  5. Stir your egg yolks into your cooled melted chocolate, and add your maple syrup.
  6. Slowly incorporate your stiffened egg whites spoon by spoon into the chocolate until a rich, fluffy mixture appears.
  7. Pop into ramekins and refrigerate for 4–5 hours.
