Gluten-Free Cheesy Garlic Chickpea Focaccia
A wholesome, grain-free twist on classic garlic bread. This family favourite is packed with flavour, and free from gluten. This focaccia is crispy, savoury, and perfect for sharing — without the guilt!
Part 1
- 2 tsp coconut sugar, maple syrup, or honey
- 2 tsp Doves Farm quick yeast
- 80 ml lukewarm water
Part 2
- 150g chickpea flour
- 10g psyllium husk
- 1.5 tsp gluten-free baking powder
- 1 tsp high-quality salt (we love Baja Gold)
- 1 large egg
- 2 egg whites
- 5 tbsp extra virgin olive oil (EVOO)
- 2 tsp apple cider vinegar (with the mother)
Toppings
- 1 sprig fresh rosemary, finely chopped
- 1 small garlic bulb, finely chopped
- Generous handful of extra mature cheddar, grated
- Optional extras: cracked black pepper, sun-dried tomatoes, or olives
Bake on 180°C (fan) for approx. 20 minutes until golden brown.
